A Special Dinner

We hope you had a very Happy Easter!
Edinburgh is a city that never sleeps. Even on Easter Sunday, most shops were open & the streets filled with people. Interestingly enough there is very little commercialism of the Easter Holiday. The last Easter Egg Hunt we saw was over a week ago and there were no signs of an Easter Bunny or Baskets, as we walked around town.
Our host, Sara, went to see her mom & grandmother last night but before leaving she showed us how to use her stove & oven. We wanted to make dinner for ourselves instead of going to a crowed cafe', pub, or restaurant.
Small by American Standards but big by Calypso's, Wendy set out to make us a superb Easter Dinner. Saturday, while galavanting through charity shops (Thrift Stores) and groceries, we found a small Lamb roast in the local "Tesco", a compact but well stocked grocery.
The Lamb came from New Zealand and cost £5 (£1=$1.25). Not bad if you've priced a small Lamb roast in the US lately!
Wendy stuffed it with smoked garlic we brought with us from Stratford. Who would have thought the butcher there would have smoked garlic!
She then surrounded the Lamb with fresh carrots, parsnips, & onions. Served with an Australian Shiraz wine & chocolate chip cookies for desert. Yummm, it was a very special dinner, in deed!
Monday is a bank holiday, so government offices and the "Post" will be closed. Although, the pace of Edinburgh won't miss a beat. So, this morning, we are off to see the National Museum of Scotland.
Admission is free and we think it will take the entire day to see. Besides, it's one of our "must do" sights while here.
