New Fillet Knife

My new fillet knife works great! It slices bone like butter and slides through thick slabs of skin and meat like a rudder slipping through water. While we have had it since Costa Rica, recently we have been getting dorado big enough to really test it out. It is Swiss made by Victorinox and designed by R.H. Forschner. My Dad gave it to me after I broke the tip off my last fillet knife, a Repala made in Finland, while trying to despatch a particularly feisty yellow fin tuna. At the time I was disappointed as this knife had filleted hundreds of fish around the world and still was in great shape, but I do like my new knife better. Thanks, Dad!
