Ooh...Barracuda

On our way into Russian Bay, we caught a four foot barracuda in the pass. It put up a great fight but we finally got a good gaff and threw him into the cockpit. I have never seen such large teeth in my life. We waited a good hour until we were sure he would not kick anymore before filleting. We got some nice fillets which we shared with a couple other boats in the anchorage.
I am going to dry the fish that we have left. I did an experiment with some trevally the other day and it turned out great. I cut it into thin strips, soaked it in vinegar for two hours, then in teriyaki for another five hours, then strung it on thick twine and hung it from the biminy. It turns out much like fish jerky, without the smoky flavor. I think it's a good way to preserve it without smoking it which we have found takes too much propane when we are not near a filling station.
