While having a tea break yesterday Al said he wished we had some cookies. I thought of what I might have on board to make something for dunking. I Googled a biscotti recipe and knew I had the ingredients. I took butter out to soften and after coffee this am I made cranberry/lemon biscotti. I removed the grate from the stove for cooling them. Its all about improvising. My occupational therapist would be proud of me . In between the baking I finished the third doggie hat for the members of the daxie 500 to wear in the parade to night.

Hi Jen, After reading your last few blogs I wanted to let you know that I, for one, am still enjoying reading your blog as you continue to discover and enjoy the delights of living aboard. We are firmly landlocked in central Maine this winter (and it is snowing!) so reading about the cruising life is just what I need. Enjoy the parade of boats and say Hi! to P & P from Osprey!

Galley Updates

Al built, painted and installed my new spice holder. It is very crisp looking and exceptionally functional. I have been really cooking up a storm since being back and it is so nice to have these spices at my fingertips to choose from rather than unloading stuff to see what I have. A similar rack is being put together for the other side of my preparation area. We have ordered 12 volt lighting for over my prep area as well. I love to cook and all these additions make creating interesting and nutritious meals so much easier.

Al is a little unsure of creating a better space for me as I'm on a bit of a rant for healthier cooking and eating. This week he was a good sport about the meatless shepherds pie I made. Red meat is a big source of cholesterol. My body makes an overabundance all on its own and taking 2 different daily medications struggle to keep my levels in a safe range. So. I'm trying to eat less red meat. The meat in the shepherds pies was replaced with lentils. It actually was quite tasty, next time i'd cook them less for more of a ground beef-like texture. The recipe was from Kiley's house mate Karina. Thanks Karina. The upside of lentils is they require no refrigeration, are easily stored and usually available, and very inexpensive.

Miss B gets in the spirit
We are going on mv/Prim in a decorated light parade this Saturday. I knit B a hat to wear for the occasion, and I'm making the boys (Red & Blackie) each one to wear also. She was not as excited about the hat as I was.

Getting Festive
We are decorating for the season. We purchased a wreath for the fly bridge, It looked lovely and festive until we had some rain that bled out the red poinsettias on the wreath. The back of the boat looked like a blood bath. Al washed it down. Al picked up a small tree that is now displayed inside on our dash, it is donned with little white lights, I have been leaving it on at night and it warms my heart when I get up at night and see the golden glow from the salon. It really feels homey. I also bought a poinsettia which is also on the dash, up out of curious Miss B's way. I understand they are poisonous to animals. Lastly I have been enjoying watching my Amaryllis plant grow. I swear that thing is on steroids. It grows like 2 inches every day. I also purchased a heavy vase and have challenged Al to keep it full. I kept bugging him of the lack of flowers recently, as they were a constant courting item. He maintained the reason was "no vase" on board. So I chose a simple , heavy based vase at Walmart for 4 bucks, So we'll see how that goes.
