Sushi
Raw Fish (VERY FRESH) Sliced very finely
Sushi Rice
Rice Vinegar
Sugar
Soya Sauce
Wasabi
Cook the rice according to instructions, it needs to be really sticky, I add sugar and rice vinegar to my rice when cooling.
Shape rice and put your raw fish on top and serve with Soya Sauce and Wasabi !

Cornish Hash
This is my version of Corned Beef Hash, doesn't look that great when photographed but tastes exceptional ! Great Boat Food and great for when you have nothing else in the cupboards...
1 x Tin of Corned Beef
1 x Tin of Potato
Squirt of Tomato Ketchup
Squirt of HP Sauce
Splash Worcestishire Sauce
1 x Onion
Chop Onions and potato and fry in some olive oil until turning brown, then add your corned beef and sauces, you need to get some crispy bits going then its done ! Serve with some delicous Baked Beans or Poached Egg on top ............ Trust me it works........

If you like noodles, You will like this one its soo easy that is if you can get the Sharwoods Pad Thai Noodles, If not you can use flat rice noodles.
1 x Tbsp Sunflower Oil
1 x Packet Sharwoods Ready to Wok Pad Thai Noodles
1 x Red Chilli
2 x Garlic Cloves Crushed
2 x Tbsp Oyster Sauce
1 x Tsp Fish Sauce
1 x Tsp Sugar
1 x Egg
1 x Chicken Breast or you can have Prawns or Pork
2 x Cups of Cabbage (finely sliced)
Handful Beansprouts
2 x Tbsp Spring Onion
Crushed Peanuts (optional)
Crispy Onions (optional)
I use a wok for this recipe..
Heat Oil in a Pan, Cook egg like an omlete then take out of pan and chop into pieces when cooled..
Add Chilli and Garlic and Stirfry for a few minutes and add your meat until brown, then add Cabbage just until wilted add your noodles, once the noodles have broken up start adding your sauces Fish, Oyster and Sugar until dissolved then add your Beansprouts, Spring Onion for a minute !!
This should take less than 10 minuts as the wok has to be extra hot ! Put some crispy onions, crushed peanuts and if you like it hot like james some extra Chilli Flakes !
We learnt to cook this dish in Thailand when we did our cooking course in Chang Mai and havent stopped cooking it since then.

Freshly Caught Tuna
Capers
Garlic
Balsamic Glaze
Olive Oil
Roast some garlic in a hot pan with olive oil just until it turns colour (not too brown)then add the Capers until warm.
In a hot pan sear the tuna on each side, just until its coloured then cut into pieces with a sharp knife pour over olive oil, roasted garlic and capers then squeeze the Balsamic Glaze over the top..

This is a really nice Salad for a Hot Summer's Day
1 x Chicken Breast
2 - 3 Sun-Dried Tomato
1/2 Small Sweet Potatoe
1/2 Small Red Onion
1 x Bag Rocket
1 x Avocado
Poach the Chicken Breast in Boiling Water, then chop into chunks / Slices (however you prefer), add two tablespoons of sweet chilli once the chicken has cooled.
Slice you Sweet Potato and put either in a griddle pan or under the grill until soft.
Put Rocket into Salad Bowl add finely Sliced Onion, Avocado and Chopped Sun-Dried Tomatoes then add the Sweet Chilli Chicken and Sweet Potato.

These were so yummy i though you may like the recipe..
Tim's Ibiza Burgers
400 g x Lean Beef Mince
1 x Onion
2 - 3 x Chopped Cloves Garlic
1/4 x Cup Pitted Black Olives
1 tbsp Balsamic Vinegar
1 Packet of Mozzarella
1 x Egg
Tablespoon of Basil (dried / fresh is better though)
Chop Onion, Basil, Garlic, Olives and add Balsamic Vinegar, Egg then and add to Mince, Mix and make into patties make a slit in Patties and stuff Mozzerella then roll in flour and onto the BBQ !!
