I made these with some left over Risotto that i had made the night before, I stuffed the balls with Mozzarella then coated with Panko breadcrumbs on a bed of spinach and tomato with balsamic glaze ....

Making Crumpets

I really thought this was going to be difficult and it was soo easy will be making these all the time !!
If anyone would like the recipe here goes !

225g Plain Flour
7g Dried Active Yeast
100ml milk (warm)
100ml water (warm)
pinch o bicarbonate of soda
pinch of salt
pinch of sugar

Pour warm milk and water into a large bowl into which the sugar, salt and yeast are dissolved. Stirring continuously with a whisk, slowly add the flour until a smooth batter is obtained. Set the bowl aside in a warm place for 1 1/2 hours or until the ferment has risen and fallen. Dissolve a pinch of bicarbonate of soda into 60g water and stir well into the ferment. Leave for 10 - 15 min.

Place greased hoops if you have them onto a well cleaned hot plate and ladle the crumpet mixture into them . When batter is holed the crumpets should be turned with a palette knife just to colour on the top this makes around 8 crumpets ! Such an easy recipe and yummy toasted with vegemite or marmite and butter on top !

This looks tasty and very pleasing to the eye as well! Do you have a recipe or two that we can put in the recipe-only version of the Son of a Sea Cook that I am working on? The plan is to feature recipes that we have collected and concocted on our travels plus ones that we have been given by friends (with the credit given in the text of course...)
