One of our 'wood fired' pizzas
We are enjoying many culinary sensations this sailing season but the highlight has been the evolution of our perfect pizza. For as many years as we can remember we have enjoyed a pizza for dinner at least once a week usually Friday nights! With our good friend Roger on board with us this year for a number of weeks, he volunteered to share his simple 'no fail' pizza dough recipe with us. On board we normally use store bought tortillas for the pizza base, as it's quicker and we don't need a high oven temperature that is required for a bread base, as we do at home. Rogers pizza dough recipe is: 1 cup of yoghurt added to 1 cup of Self-raising flour-that's all! After mixing the two ingredients together, the mix can be kneaded on a floured surface, until smooth before rolling the dough out to fit the tray being used. The usual toppings can be added. We have enjoyed seafood, vegetarian and Capriccosa. Olives, anchovies and a sprinkling of dried chilli add the final touch. We have discovered fanatstic anchovies in Croatia which are plump and juicy compared to what can be bought back home. Croatian olives are a disappointment compared to Greece but we have survived! We have honed the cooking process trialing both the oven and coal fired BBQ and then compared results. The charcoal BBQ wins 'hands down'. Foil is used under the tray which slows down the cooking of the base and allows the top time to cook through. The end result is an Italian style pizza- a crispy, thin base with a nicely browned top. We have 'wowed' our visitors on board with our pizzas, as can be seen by the accompanying photo!
