I had never cleaned such a big fish but was up to the challenge. Chris furled the jib in to slow the boat so I could clean the fish on the sugar scoop. It took awhile but I did it. I fileted the fish leaving behind the head, bone ,gut and the tail. I was proud of the job I did. I then skinned the filets and got it ready for the frying pan. YUM!
