At My Brother's Shed in Canso, Nova Scotia, his friends from NewFoundland are cooking up a feed of fish. Fresh Halibut is cooked in Don's special spices. Don spices are his personal recipe of mixed spices, tried and perfected.
A fish fry NewFoundland style is not complete without scrunchions. What are they? Scrunchions (Fried Salt Pork)
Scrunchions - (a Newfoundland term) are small irregular sizes and shapes of cured salt pork fried golden grown or until all fat is rendered or extracted.
The scrunchions are in the bowl in the photo.
It was all just delcious!
