David's sister, Mary, is a really, really good cook. I mean, really, really good. It's hard to maintain any sort of diet while living in this house...and actually, who cares. So when she announced that she felt like making a special brunch on Sunday, there were no complaints. She worked up the menu and all we were responsible for was the champagne and OJ for mimosas (a mandatory component of a proper brunch).
The big day arrived. We had noticed odds and ends of specialty items in the fridge with "do not eat" signs attached, but we weren't prepared for the final feast. We started with a Caprese salad...fresh tomato slices layered with mozarella sliced thin and topped with fresh basil and drizzled with a little balsamic.
Eggs Florentine followed...wilted spinach on lightly toasted English muffins topped with a poached egg and hollandaise sauce. A side of fresh melon and mango added a lovely contrast to the egg dish.
We were so stuffed that later in the day it was hard to eat more...but we did. Homemade pita chips with fresh hummus was great, but the fresh berry trifle that followed was over the top.
Okay, okay...all diet's are off.
