Sorting out the bread making on board
1/2 c Sour dough starter
1 c water
15mls oil
3 1/4 c flour (mixed)
Mix together, then let sit for 1-4 hours, then pinch in 1tsp salt dissolved in 15mls water. I leave over night. Knead for a couple of minutes in the morning. Let rise again. Then bake for an hour. Baking times depends on your oven, it should be as hot as possible. You may be able to cook it quicker than that. Use a dutch oven system if you have one on the boat. I just add a container of water to the oven, and spray top of bread with water a couple of times. And it's worked every time.
Oat Bran date loaf

1c stoned and chopped dates
2 t honey
rind 1 lemon, and juice of half a lemon
soak in 1 cup boiling water
Add 1 1/4 cup white flour
1/2 cup oat bran
3/4 cup brown sugar
1 t cinnamon
1 t baking soda
1 t baking powder
Cook in loaf tin in moderate oven, 30 mins or until knife comes out clean.

Wholemeal, with caraway seeds "à la Jana".
1T Yeast
1t sugar
3T warm water
Mix together, cover and leave for 15 mins
Add 2C white flour, 1C wholewheat, 1t caraway seeds & 1C warm water
Knead to form soft dough, maybe 1 minutes worth kneading.
Leave covered in warm place for half hour
Bake 30 mins in moderate oven
Chocolate Self saucing pudding

100gm Butter 1/2 C Sugar
2Tbs Coco powder 1 1/3C Flour
4tsp Baking powder ½ tsp vanilla essence
1/4 tsp Salt 2/3 C Coconut Milk
3/4 C Coconut
1/2 C Brown sugar 2 C Boiling water
4 Tbs Coco Powder
Melt the butter and mix in the sugar and coco powder.
Add flour, baking powder and salt and mix until just combined.
Mix in coconut, coconut milk and vanilla.
Put into a dish so it comes no more than 1/3 up the side (cos it boils, and will mess up your oven) 20x25cm is good.
Put brown & coco powder on top.
Just before it goes into the oven carefully pour the boiling water over a spoon onto the mixture.
Bake for 40 minutes at 180C.

Coconut & passionfruit cakes

220g softened butter
2 t vanilla essense
3/4 C castor sugar
2 lgr eggs
1 C coconut
1 1/2 C SR flour
2/3 C Coconut milk
Cream butter and sugar, vanilla essence. Add eggs one at a time, beating well after each addition until mix is soft, and creamy.
In a separate bowl - combine coconut with coconut milk then add to the main mixture. Add sifted flour and beat until combined. Spoon mix into pans and bake for 2o mins or until golden.
When cool, spread with passionfruit icing and sprinkle extra coconut over.

Salt water Bread

1/4 oz yeast
2 T sugar
1 1/2 c saltwater
4 c flour
Dissolve yeast and sugar in water. Add flour, and mix well.
Put in telfon pan, pat down. Close lid, or cover with cloth.Let rise overnight. Bake as normal.
For stove top baking. 20 mins each side.
