Tequila making

On our way back down the mountain from San Sebastian, we stopped and took a tour of a small tequila factory. The drink is made from the stump of a aguave tree which is at least 7 years old. The stump is dug up so they are to replant each year. If it cut up and a mash is made which ferments for a period of time. It is then heated and distilled in the barrel seen in the picture. This is the finished product which is dripping out.
