Mahi-mahi, one of our favourite fish

At 5 o'clock in the afternoon and being out at sea for a couple of days after leaving French Guyana, the ratchet on the Penn reel of our fishing rod came to life. That always brings some action onboard Diesel Duck. We dropped everything we were doing and Benno sprinted to the rod holder at the aft deck, grabbing his rod holster and gloves on the run. The fish he tried to reel in put up a good fight and Benno shouted for me to slow the boat down to ease the strain on the line. We realized we had hooked a mahi-mahi as he leaped out of the water trying to loose the hook. He was a beautiful fish and strong, but after some minutes he got tired and Benno lifted him into the dinghy where he slashed around a bit.
The next two hours I was busy cleaning and filleting the fish, then vacuum packing portions for the freezer. We would be eating mahi-mahi for a while.
