We had the opportunity to hang out with Bennett and Susan on Pratique. We enjoyed time together at Honeymoon Beach (Water Island), Coral Bay (St. John), Caneel (St. John), and North Sound (Virgin Gorda). We promised to take good care of Bennett in Susan's absence (she needed to fly home), but he really took good care of us. Josh, Bennett and I had many good adventures together with lots of laughs. One not so good adventure Bennett and I had was snorkeling around Henley Cay when the current became so strong it prevented us from getting to our dinghy. We were forced to make a landing on sharp rock (I have a nice scar on my elbow to remind me) and walk gingerly back to the beach where we could swim out to the dinghy. Yep, I had flashes of a made for tv movie about two snorkelers getting pulled out to sea and never found again.
Over the years, Bennett has told us of this pasta dish he ate growing up. Well, after many requests, Bennett finally made us his famous "Kashdan pasta" and we have enjoyed making it several times since.
Kashdan Pasta
Boil pasta to your desired tenderness. Drain and return to pot. In a second pot, combine equal amounts of butter and ketchup and stir until well incorporated. Add to pasta and stir to coat noodles. Eat it plain or serve with parmesan cheese, chopped basil, and/or red pepper flakes. Enjoy!
