Brucetta pizza

The magic of this pizza is that it can be made on the stove top if necessary!

Buy or make french bread as directed

Assemble brucetta
warm olive oil....not too hot.....don't want to burn the crushed garlic
Add crushed garlic and chopped or dried basil to warm oil( some like oregano and other nice italian spices.....add to your own taste)
Cut, skin tomatoes into small pieces and let excess juice run out before adding to oil.( i sometimes do this with paper towel, or a strainer)
Add tomatoes to olive oil mixture
Add balsamic vinegar
Add sugar 1/2 tsp at a time if using non organic canned tomatoes. Taste before adding more. Just a tiny bit gets rid of the canned taste.

Assemble the pizza
cut bread lengthwise in half, then into pieces that fit into your largest frying pan
Drizzle with olive oil and pan brown them
Remove bread from pan and top with brucetta and mozzarella
Either place in hot oven till done or reheat frying pan, place pizza in it, and cover. Turn heat off as not to burn bottom of pizza. Cheese will melt
