A Taste of Mustique

Carambola grilled chicken legs

While in St Lucia, the fruit man used to paddle around the boats delivering all kinds of fresh fruits: mangoes, oranges, limes, and the most beautiful carambolas, known here (and Australia) as starfruits due to its 5-sided start shape. With its yellow glossy skin, and juicy citrus flesh, it’s a fruit that begs to played with: to decorate a cocktail glass, in fruit salads, or in my friend Errel’s carambola tart. Its tart flavour however never appealed to Terry and the kids, so they were quite dubious when I came back from Stanley’s market in Mustique, with a basket full of golden stars. “What on earth do you plan to do with these?” Ah, but I also had grabbed a copy of the local cookbook written by a Mustique chef, aptly called A Taste of Mustique, which features delicious recipes using local produce including Carambola barbecued chicken legs. I tweeked it a bit, as I didn’t have the exact ingredients (beside the starfruits and the chicken!), used whatever spices and herbs I had on hand, and grilled the chicken in the oven since we don’t have a BBQ…yet. The result was finger licking good, juicy inside, crispy outside with a sweet slightly citrusy (spelling?) flavour. YUM! It’s now become a family favourite. Note: the glaze works really well as salad dressing too!!

Serves 4-6

4 tbsp of jerk seasoning mix
3 tbsp olive oil
8 chicken legs, halved

3 carambolas, sliced
¼ cup lime juice
½ cup honey
4 tbsp dill ( or parsley, coriander, whatever herb is at hand)
2 tbsp white wine vinegar
1tbsp soy sauce
1 tbsp chopped garlic
1 tbsp hot sauce/cayenne pepper (optional)

Combine the seasoning and oil, baste the chicken well. Set aside for 20 minutes at room temperature to let the flavors develop.
Blend all the ingredients for the glaze together until well combined and set aside. Grill the chicken for about 25 minutes, turning occasionally and brushing with the glaze after each turn.
Transfer to a plate and garnish with fresh carambola and lime slices. Serve with steamed rice and sautéed onions.

Poulet grille aux caramboles

A Ste Lucie, le marchand de fruits ambulant faisait le tour des bateaux en offrant toutes sortes de fruits : mangues, oranges, citrons verts, et de magnifiques caramboles, appelees « star fruits » dans les iles anglo-saxonnes et en Australie, car coupe en rondelles il donne de ravissantes etoiles a 5 branches. Avec sa peau jaune d’or tres fine et sa chair tres juteuse, c’est un fruit qui ne demande qu’a ennoblir le moindre plat : en deco dans un cocktail, dans des salades de fruits, ou excellent dans la tarte aux caramboles de ma copine Errel. Le seul problem est son gout acidule qui ne plait pas a tout le monde, notamment Terry et les enfants. Alors quelle n’etait pas leur reaction douteuse, quand je suis revenue du « Stanley’s market » a Mustique, avec mon panier plein de fruits dores. « Qu’est ce que tu vas faire de tout ca ? » Ah, mais c’etait sans compter sur le nouveau livre de cuisine que je venais de decouvrir, « A Taste of Mustique », ecrit par un chef local, et regorgeant de recettes delicieuses qui utilisent des produits locaux, telle que ce BBQ de Cuisses de poulet aux caramboles. Comme je n’avais pas tous les ingredients (a part bien sur le poulet et les caramboles), j’ai adapte la recette en utilisant les herbes et les epices que j’avais a bord, et en grillant le poulet dans le four vuq eu nous n’avons pas (encore) de BBQ. Le resultat etait delicieux a s’en lecher les doigts (ou les babines ?), tendre et juteux a l’interieur, croustillant a l’exterieur avec un leger gout d’agrume. MIAM ! C’est maintenant un de nos plats prefere. Note : la glace/sauce est tres bonne egalement en vinaigrette !!

Pour 4-6 personnes

Ingredients :
4 c.a.s d’assaisonnement cajun
3 c.a.s d’huile d’olive
8 cuisses de poulet, coupees en 2

Glace/Sauce :
3 caramboles, coupees en rondelles
¼ tasse jus de citron vert
½ tasse de miel
4 c.a.s d’aneth (ou persil, coriandre, selon vos gouts)
2 c.a.s de vinaigre blanc
1 c.a.s de sauce soja
1 c.a.s d’ail hache
1 c.a.s de hot sauce/poivre de cayenne (facultatif)

Preparation :
Melanger l’assaisonnement avec l’huile d’olive, en enrober le poulet. Mettre de cote 20mn a temperature ambiante.
Bien melanger tous les ingredients pour la glace/sauce dans un mixer et mettre de cote. Griller le cuisses de poulet pendant environ 25-30 minutes, en les retournant de temps en temps et les enduisant de glace/sauce a chaque fois.
Transferer dans un grand plat, garnir avec des rondelles de carambole et de citrons verts. Servir accompagne de riz blanc et d’oignons sautes.

2 glorious months, cruising various parts of Fiji. So many different experiences in one country: lush rainforests, colourful indian towns, blue lagoons, traditional villages, great fishing, fancy resorts... And the best part was sharing the cruising with family and friends. Can't beat Fiji with company! Here is a collection of our favourite moments (and there are a few!!!)

Having visitors means putting on our tour guide hat "Voahangy & Co in Mexico", much exploring and eating: ruins, cenotes, beaches, villages, markets,... . I shared Mexican cooking lessons and was repaid with Dutch baking classes from our French guest. We ate a lot of cakes this month! So much sugar, no candies needed for Halloween this year, just parties...

This is the slowest month of the year in Mexico: hurricane threats, hot and humid weather, torrential rains drive the tourists away and confine the rest of us indoors. It poured for 22 days non stop! We still managed a dive (in the rain) for Father's Day, a day of all you can eat and drink at the local resort for Terry's birthday, and as usual lots of cooking and eating. Just on cue, the weather cleared at the end of the month for the arrival of Marie Suzanne, a French girlfriend. So lots of touring and catching up. Celebrated Mexican Independence Day all month long (it seems), eating black beans and pork verde!

No excursions this month. Just hanging around Puerto Aventuras, school, friends, ...Sat thru a couple of storms, torrential rains, big winds...Nowhere to go so more time spent in the galley and writing about it!!!

Holiday month for everyone: visitors from the USA, kids in and out, parties, US National Day celebration, French National Day celebration, Tulum for a night (bliss...) The start of a new food blog meant a month spent in the galley experimenting. Not much in terms of local food, mostly home cooked French. Chocolate cake anyone?

Not much tourism this month. We finally made the decision to stay for the rest of the year. So it's head down with school, get together with cruising friends ( they're passing thru while we stay behind) and switching to "landlubber's" mode. Resolved to eat at home more often, back to healthier diet.
